Recipes

I've been on a search for GOOD, EASY recipes.
i have a range of picky to will eat anything kids/hubby, so it's not always easy to find something that the picky ones will eat.

something really easy i did last week was meatball subs.

  • I had already made homemade meatballs (they were already cooked and in the freezer,  i only had to pull as many as i needed out),


  • put them in a pot with bottle of ragu spaghetti sauce until hot.


  • I put the bread in the oven on broil to toast it a little (watch carefully),


  • spread sauce and meatballs on french bread,


  •  top with mozzarella cheese,


  • put them in the oven on broil (watch carefully!)

They loved it! EASY PEASY!

We do chicken A LOT
mostly just grill it in a pan and do different side dishes (hubby is a PASTA LOVER, so we have different pasta dishes....often out of a box! i know, shame on me!)

Hamburgers
I get a HUGE pack of ground meat, make my patties ahead of time using the entire pack, flash freeze, then i can take out 1, 2 or 10 at a time...however many i need at a time. QUICK...easy!

pork chops:
I put a little seasoning, brown them well on each side in a pan.  Splash on some wocesteshire sauce, let them finish cooking.  Serve with a side.  (read: PASTA LOL)

we do fajita's often

one of the favorites is enchilada's:

  • brown a pound of ground meat


  • you can add onions if you like them


  • add a pack of taco seasoning


  • a big can of enchilada sauce (i use the red one)


  • cook until hot


  • spoon out mixture into tortillia


  • add cheddar or mexican mix cheese (a little or a lot, whatever you like)


  • roll up and put in pan


  • add a small can of enchilada sauce to remaining meat mixture


  • spoon over pan of enchiladas


  • top with cheese (a little or a lot, whatever you like)


  • bake on 375 untill cheese is melted and starting to brown a little

i make a huge pan every time i make this.  any extras that are not eaten the next day, i put 2-4 in zip lock bags and freeze them.  defrost the day before in the fridge, put in pan and cook until hot.

Pizza is a favorite here... ALL of them will eat this, although they each have a different kind they like!
Lance: pepperoni
Travis: SUPREME (me too!)
Trevor: hamburger (or cheese)
The littles: cheese

Here is one they might like and its EASY (you could use ant kind of pasta)


Baked Macaroni

Ingredients
1/2 pound extra-lean ground beef
1 small onion, diced, about 1/2 cup
1 box (7 ounces) whole-wheat elbow macaroni
1 jar (15 ounces) reduced-sodium spaghetti sauce
6 tablespoons Parmesan cheese
Directions
Preheat the oven to 350 F. Lightly coat a baking dish with cooking spray.
In a nonstick frying pan, cook ground beef and onion until the meat is browned and the onion is translucent. Drain well.
Fill a large pot 3/4 full with water and bring to a boil. Add the pasta and cook until al dente (tender), 10 to 12 minutes, or according to the package directions. Drain the pasta thoroughly.
Add the cooked pasta and spaghetti sauce to the meat and onions. Stir to mix evenly. Spoon the mixture into the prepared baking dish. Bake until bubbly, about 25 to 35 minutes.
Divide the spaghetti among individual plates. Sprinkle each with 1 tablespoon Parmesan cheese. Serve immediately.

the baked macaroni sounds like Ziti that i make and they LOVE. the only difference is that I put a cup of Mozerella cheese into the mix and top with mozerella too.

your recipe is healthier! ;-)
